I do my 1st grind with my 1" (25.5mm) LOhole plate for a very large course grind can use a 3/4" hole plate, add the spices mix well and put in freezer for 30 minutes with blower on to chill quick, then regrind with a 1/4" hole plate, this mixes the spices thru the meat, cracks the fennel seeds and it is ready in as little as 2 hrs to eat. My grinder is 1hp.size 22 plate. I have plates from: 2.5mm, 3mm, 3.5mm, 4mm, 4.5mm, 5mm, 6mm, 7mm, 8mm, 10mm, 12mm, 16mm, 19mm, 22mm, and 25.5mm.

Plus I have a double and triple hole stuffing plates plus have a 2mm plate on order from Germany to make hot dogs- you need an assortment of brushes to clean the plates one hole at a time, especially the small holed ones in the summer time I use my pressure washer, in winter I use the car wash pressure washers for the first cleaning then re-wash at home. I made a clamping form to hold the grinding plates using C-Clamps when pressure washing as they cost $20-30 each and don't want to loose them down the drain.

  4. It needs no fennel.  It needs some brown sugar, a bit of onion and garlic powder, and dare I say a slight dusting of cumin and red pepper.  A Southern variant.  Ok, I hate fennel and cloves.  I have outted myself.  I feel so much freer now, such a relief.

  5. My local Kroger has fresh ground pork available almost daily. Really not a lot of fat content. I have been making my own patties hand mixed for use in the very near future for years. You pretty much have the same recipe as me and I never read a recipe until now. I never tried the nutmeg or zest though. thanks for sharing . looks great
